Duck Breasts with Cassis and Raspberries

Magret is the French name for duck breast, the leanest part of the duck. Magret de canard is usually served pink with a well-crisped skin. You can use frozen raspberries for this recipe, but make sure they are thoroughly defrosted.

serves 4

4 x 200 g (7 oz) duck breasts

2 teaspoons sea salt

2 teaspoons ground cinnamon

1 tablespoon demerara sugar

250 ml (9 fl oz/1 cup) red wine

170 ml (6 fl oz/2/3 cup) crème de cassis

1 tablespoon cornflour (cornstarch) or arrowroot

250 g (9 oz) raspberries
